Portabella Pasta
Ingredients:
6 to 8 ounces of portabella mushrooms
2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup chopped sweet red pepper
1 teaspoon minced garlic
2 cups of prepared marinara sauce
8 ounces pasta, cooked according to package directions
Salt and pepper to your taste
Directions:
Slice portabellas. In a large skillet, heat oil. Add portabellas, onion, red pepper and garlic. Cook and stir until mushrooms are tender (five to six minutes). Stir in the prepared sauce, heat until hot (about three minutes). Add pasta. Toss until well combined. Season with salt and pepper to your taste.
Makes four portions, about 11/2 cups each.
