Ingredients:
2 tablespoons soy sauce
2 tablespoons rice vinegar or cider vinegar
2 tablespoons sesame oil
1 tablespoon brown sugar
3 teaspoons fresh minced ginger
8 ounces fresh exotic mushrooms, such as shitake or oyster, trimmed and cut into bite-size pieces
6 scallions, white and light green parts cut into one-third inch lengths
4 6-ounce salmon fillets, preferably center-cut about 1-inch thick
1 tablespoon sesame seeds
Directions:
Preheat oven to 400 degrees. In a medium bowl, whisk together soy sauce, vinegar, sesame oil, brown sugar, and minced ginger. Toss mushrooms and scallion pieces in sauce. Lightly oil the bottom of an 8-and-one-half by 11-inch baking dish. Lay salmon fillets in the baking dish and pour mushroom-scallion mixture with sauce over fish. Bake for about 20 minutes, or until salmon is just cooked through. Serve sprinkled with sesame seeds.
