Bruschetta with mushrooms and boursin
Ingredients:
Ciabatta bread sliced
Provolone Cheese
Button and Portabella Mushrooms
Diced tomatoes
Carmelized Onions
Lemon juice
Butter
Extra virgin olive oil
Boursin cheese
Black pepper
Directions:
Place bruschetta bread sheet tray, top with provolone, and bake @ 350 for 8-10 minutes.
In saute pan, heat oil, add button mushrooms, and saute until slightly browned.
Add portabella, onions, and crushed red pepper, and saute 2 minutes.
Add tomatoes, broth, lemon juice, and salt and pepper. Saute 1-2 minutes.
Remove from heat, and add scampi butter and thyme. Stir to combine.
Top bread w/ mixture, drizzle w/ olive oil, and garnish with black pepper.
